Ingredients

  • 0.5 l. vodka (can be replaced with moonshine or diluted alcohol)
  • 1 tsp. anise (without a slide);
  • 1 tsp. caraway seeds (without a slide);
  • 2 star anise;
  • 1 tsp. Sahara

Recipe

  1. Pour the spices into a glass jar and fill with vodka. We don't add sugar! I recommend buying spices not just anywhere, but in trusted specialized stores. For example, I take Z here– excellent quality and good prices.
  2. Close the jar tightly and leave in a dark place at room temperature for two weeks. Shake the jar once every 3 days.
  1. Filtering. Small suspensions and sediment usually do not appear in the tincture, so it is well filtered through cheesecloth.
  2. Dissolve a teaspoon of sugar in the filtered tincture. Before doing this, I recommend taking a sample, perhaps for your taste it will turn out that the drink is already quite sweet.

Beneficial features

Remember this cough syrup - “Pectusin”? This is exactly what it includes: star anise and anise. These spices are great for treating colds and are used for asthma and loss of voice. They have a warming effect and simply freshen your breath. Cumin is a good anti-inflammatory agent.

One of my favorite tinctures. Has a pleasant straw color. It has a wonderful smell and excellent taste. The aroma of anise is quite unique and easily recognizable. Anise vodka was also consumed by Russian sovereigns - Ivan the Terrible and Peter I. Russian anise vodka also has relatives in the Mediterranean - in Turkey these are Raki (Turkish Rakı), by the way, this strong alcoholic drink is considered a national drink in Turkey. For the Greeks it is Ouzo ( Greek Ούζο). For Bulgarians it is Mastic and Rakia with anise (anasonliyka).
Anise seeds have a pleasant spicy smell and a sweet, refreshing taste. A drink infused with anise acquires the taste and aromatic qualities of spices. So we decided to make aniseed vodka and try it - what does it taste like? Is it really better than Stolichnaya?Anise vodka recipereproduced from an old Russian cookbook. A simple version of anise is to infuse vodka with anise (bitters), a more complex one is by distillation.

We need (per 1 liter):

Vodka 40% (any) - 1 l,
. anise seeds- 34 g,
. caraway seeds- 7 years

Then we grind the seeds in a convenient way (in a mortar or chopper).
It’s better not to grind it (I overdid it), but to grind it coarser - finely ground seeds, of course, better “share” their aromas with vodka, but then it’s more difficult to strain.


Pour the crushed spices into a container in which you are then supposed to infuse the vodka.


Pour vodka into the container, seal the container and shake the contents.


Leave to infuse for at least 20 days. Shake the bottle from time to time.


Filter the brewed drink. Do not strain, but rather filter. Then pour the resulting anise vodka into bottles. You can also taste it.

For many thousands of years, anise has been used not only as a seasoning for meat dishes and confectionery, but also as a flavoring agent for alcohol. The alcoholic drink, which is still infused with anise seeds, is called anise vodka.

What is anise?

This is a herbaceous plant. It belongs to the Umbrella family. Anise is famous for its medicinal properties. The seeds, roots and stems of this plant are used for treatment. It is used to improve intestinal motility, as well as the secretory function of the gastrointestinal tract. Therefore, since ancient times, aniseed vodka was consumed before lunch to improve appetite. In addition, this spice is excellent in treating coughs, as well as as an analgesic and disinfectant.

In cooking, anise is used as a seasoning to add an original taste and aroma to hot dishes, as well as baked goods and confectionery. Due to the content of essential oil in its composition, this seasoning has a rather specific smell, so it is excellent for tinctures and liqueurs.

Anise vodka

But, unfortunately, this type of alcoholic drink is no longer produced in our country. The main countries that produce anise seed tincture are France, Italy, Greece and Turkey.

Each of the varieties from these manufacturers has its own characteristics and is distinguished by its strength and intensity of aroma. These differences depend on the preparation methods as well as the plant variety used. The most popular varieties of aniseed vodka are Sambucca, Anisette Marie Brizard and Raki. Making vodka using anise seeds gained great popularity several thousand years ago. Anise vodka was mainly consumed by feudal lords, nobles and members of the nobility. In modern Russia it is also particularly popular. This type of alcoholic drink has a special aroma and taste. It is for these properties that anise vodka is valued. In addition to anise, other spices and seasonings or citrus zest are added to this tincture, which also gives the vodka an original taste and smell.

Making tincture at home

There are many recipes for making this drink, but all of them, of course, are based on the use of anise seeds for flavoring. Below is one cooking method for which you will need the following:

Drinking alcohol 40 degrees - 12 liters.

Star anise - 200 g.

Anise seeds - 400 g.

Coriander - 200 g.

Fennel - 50 g.

Sugar - 3.3 kg.

Water - 1.6 liters.

The process of creating a drink

If it is not possible to purchase drinking alcohol, you can use plain vodka. Spices must be poured with alcohol and left for 1 month. Then distill to obtain 10 liters of alcohol. Prepare the syrup separately by diluting the sugar in water until completely dissolved. Add syrup to alcohol. Then strain and filter the resulting liquid. Homemade anise tincture is ready, now you can please your guests by decorating the festive table with a decanter of clear intoxicating liquid, which has been so valued at all times!

There are several time-tested ways to make aniseed vodka at home. The first method of preparation is tincture with vodka, the second - with alcohol.

Homemade anise vodka

Pour a liter of good vodka into a convenient container - a jar or a large bottle. Try to buy this drink only in specialized stores to avoid poisoning. Crush the cloves and anise seeds well and pour the resulting mixture into a jar of vodka.

Close the jar tightly with a lid, shake well several times to mix the liquid with the spices and place in a dark place, protected from sunlight. Leave the tincture for 4-5 days, after which you will need to add a little sugar syrup to it. Boil syrup from sugar and water, cool and pour into the tincture. Mix well and place in a cool place. Let it sit for a month - the tincture will need to be shaken off periodically.

When the spices give off all their aroma, the drink will need to be strained through cheesecloth and poured into a decanter or small bottle. Homemade anise vodka is ready to drink - drink chilled or with ice. For freshness, you can add a mint leaf or a slice of lime to the glass.

Anise recipe

For this anise recipe, you will need to prepare a large bucket or enamel pan. Pour anise seeds, cinnamon, cloves and zest from one medium lemon with the required amount of alcohol. The spices should steep well for 5 days; to do this, place the container in a dark place at room temperature.

Make syrup from water and sugar. Pour sugar into water and bring to a boil, stirring constantly. Remove the liquid from the heat, cool, then heat again over medium heat and bring to a boil. Cool the syrup a little and pour into the mixture of alcohol and spices. Mix well, cover and place in a cooler place. Homemade aniseed vodka prepared according to this recipe will be very strong and will taste more like the Turkish drink Raki. After about 3 weeks, the drink can be strained. Fold a piece of gauze in several layers - put cotton wool and a powdered activated carbon tablet on the bottom layer. Thanks to this cleaning, the drink will be clear. Carefully pour the contents into jars or bottles and close tightly.

Since the anise was infused with alcohol, its strength will be more than 50 degrees, so before drinking, pour cold water with ice into a glass of vodka.

In Russia there have always been two traditional recipes for anise vodka. For the first, the seeds of Chinese anise and other spices were used. For the second, they took the seeds of common anise, which grew in Russia. Both drinks are aromatic, although they differ slightly in taste. At home, you can add various spices that suit your taste. You can also adjust the sweetness of the drink. You can make a sweet, thick liqueur by adding more sugar syrup, or you can make a weaker liqueur by adding more water.

You can drink anise pure or diluted; it is perfect as an aperitif.

Greek vodka with anise ouzo is made on the basis of grape distillate or a mixture of brandy with rectified alcohol (pure alcohol 40-50% strength) and infused with anise and other various aromatic herbs. In the production of ouzo, almonds, star anise, cloves, fennel, cardamom, coriander and many other spices are often used, the use of which is determined by the region where the anise-infused vodka is prepared. Anise is an invariable component of this strong drink. In appearance, ouzo does not differ from ordinary vodka - the drink is absolutely transparent. The entire process of producing vodka with anise is reminiscent of making homemade sambuca, but Greek vodka is not so sweet and does not contain elderberry. The drink has a very soft and balanced taste. Each ouzo manufacturer has its own recipe for making the drink. The national legislation of Greece requires compliance with only two mandatory rules when producing alcohol - ouzo must contain at least 20% wine alcohol from juice or cake and anise must be present.

According to legend, ouzo is the drink of immortality for the gods. In Greece it is produced everywhere; no feast is unthinkable without anise vodka. Vodka with anise is a national treasure and pride of the Greeks.

History of the drink

The predecessor drinks of ouzo, which are herbal tinctures in wine alcohol, date back to the times of the Byzantine Empire. In the 14th century, vodka tinctures were used even by Athonite monks. According to legend, it was the monks who began to use anise, called “ouzo” in Greece, in the drink’s recipe. But the ouzo recipe was finally finalized in the 19th century after Greece gained independence. The main center for the production of anise-based vodka was the Greek island of Lesbos and its settlements of Tyrnavos and Kalamata. Since 1989, the name "ouzo" has become a registered trademark, which can only be used for products made in Greece.

Methods of use

Tincture of anise and vodka can be used both in pure form and diluted. Pure ouzo is commonly called “Sketo”. In this case, the drink is served poured into 50-100 gram glasses with a temperature of about 20 degrees Celsius. In Greece, it is customary to drink aniseed vodka in small sips so that you can discern all the nuances in the taste of the alcohol. Alcohol does an excellent job of stimulating the appetite, which is why it is recognized as an excellent aperitif. They eat ouzo when served with classic seafood for Greek cuisine, light Mediterranean salads, as well as meat, cheese, fruits, olives, sweets and strong coffee.

During mass feasts in Greece, it is customary to dilute ouzo with water. This is done to reduce the strength of the drink and soften its taste. The tincture is diluted with anise in a 1:1 ratio, after which it becomes cloudy and turns white. In Greece, they never make cocktails based on ouzo and do not mix it with any other drinks.

Despite the categorical rejection in the homeland of the drink of its combination with other types of alcohol or juices, in Europe they often make cocktails based on aniseed vodka. The most popular cocktails are Iliad, Buso and Greek Tiger.

To prepare the Iliad, you need to take 120 milliliters of ouzo, 60 milliliters of Amaretto, 3 strawberries and crushed ice. The cocktail glass is filled halfway with ice and then filled with a mixture of Amaretto and ouzo. Strawberries need to be simmered in a blender and the resulting pulp added to a glass of cocktail. All ingredients are actively mixed.

For lovers of strong alcoholic drinks, the Buzo cocktail is perfect. In it, 30 grams of ouzo, 60 grams of bourbon and 15 grams of dry red wine are mixed in random order. The ingredients are cooled and served in a tall cocktail glass.

The drug "Alcobarrier"

The lightest and most feminine cocktail is the Greek Tiger, which is also made with aniseed vodka. Alternately pour 30 milliliters of ouzo and 120 milliliters of orange or lemon juice into a glass with ice. The cocktail is actively stirred and served with a citrus slice garnish along the edge of the glass.

Anise vodka recipe

Aniseed vodka is quite easy to prepare at home. Of course, the resulting alcohol has nothing in common with traditional Greek ouzo. However, if you infuse vodka with anise, the taste of the homemade drink is quite identical to the original product.

The recipe for vodka with anise involves the use of the following ingredients:

  • 1 liter of vodka;
  • 2 liters of water;
  • 100 grams of anise;
  • 20 grams of star anise;
  • 2 cloves;
  • 5 grams of cardamom.

First, anise and all the prepared spices are added one by one into a container where alcohol or vodka has been previously poured. This mixture is tightly covered and placed for 2 weeks in a dark place with an air temperature of about 22 degrees. After this period, the alcohol is strained through cheesecloth, diluted with clean water to a strength of 20-25% and poured into a container for distillation. All the spices collected after straining are suspended in gauze in the same container. Vodka must be distilled and the finished product must be kept in the dark for about 3 days.

Before you start making an ouzo analogue at home, you need to take care of where to buy anise for vodka, how to choose high-quality alcohol and decide on the number of distillations of alcohol, each of which makes the degree of vodka higher than the original one.

The benefits and harms of anise vodka

Anise tincture with vodka has a number of useful properties. It is often used as an effective medication because it contains essential oils that improve digestive functions and have disinfecting properties. For regular problems with stool, take a tablespoon of anise tincture before meals.

The beneficial properties of anise tincture with vodka also appear in the treatment of tracheitis, bronchitis and cough of various etiologies. To do this, 5-10 drops of an alcoholic anise drink are added to a herbal mixture consisting of hawthorn, rose hips and St. John's wort, seasoned with honey and given to drink 2 times a day until all painful symptoms are eliminated. The medicine helps clear mucus, soothes coughs and eliminates pathogens.

Vodka infused with anise helps women cope with poor health during the menstrual cycle. The drink eliminates spasms and pain in the back and abdomen. Anise tincture to combat premenstrual syndrome is taken 1 teaspoon 3 times a day.

Anise and vodka tincture helps eliminate bacteria in the mouth, which often causes unpleasant odor and gum problems. To do this, dilute 20 drops of tincture in a glass of water and rinse your mouth with this solution after each brushing of your teeth. This elixir can eliminate bad breath and improve gum health in just a few days.
