  • Walnuts – 50 g;
  • Breadcrumbs – 3-4 tbsp. l.;
  • Vegetable oil – 4 tbsp. l.;
  • Ground pepper;
  • Salt.

How to cook chicken zrazy with mushrooms and cheese in the oven

Peel a large onion and chop half of it not very finely. Place the prepared vegetable in hot oil (3 tbsp), cover the pan and fry at medium temperature for about 10 minutes. Stir occasionally and remove from heat when the onion becomes soft.

While we are preparing the onions, thoroughly wash the champignons and chop them into medium pieces. Add the mushrooms to the fried onions and cook everything, stirring, for about 15 minutes. The mushrooms should be slightly browned. Sprinkle with salt and stir. Place on a plate and cool.

While we cook the mushrooms, finely grate the cheese. Any hard cheese to taste is suitable for the filling.

Mix the cooled champignons with onions and the filling for zraz is ready.

We wash the chicken fillet, cut it into medium pieces, the remaining onions into several parts, and simply peel the garlic. We send everything in portions to the meat grinder and the minced chicken is ready.

We supplement the preparation for zraz with an egg, salt and ground black pepper.

Chop the walnuts with your fingers, put them in a mortar and grind them with a pestle. You can also crush the nuts with a rolling pin, placing them in a regular plastic bag. Sprinkle the minced meat with breadcrumbs and nuts, which will add a light nutty flavor to the dish.

Mix all the products well, divide into 4 parts and form into balls.

We flatten each ball into a thin cake (it’s more convenient to do it on a palm moistened with water) and lay out the aromatic filling of mushrooms and cheese (¼ of each).

Cover the sides of the mixture with minced meat and make an oblong cutlet. Using this principle, we form all the zrazy, place it on a baking sheet, greased with oil (1 tbsp.) and put it in the oven.   1. All ingredients and their quantities given in this recipe are, of course, selected according to taste. Zrazy, as many people know, is a potato cutlet with filling, but there are also meat zrazy with various fillings. The filling can be whatever your imagination is rich in, prunes, herbs with butter, mushrooms, cheese, boiled eggs and much more.
    First, let's prepare the ingredients we need. To prepare chicken zrazas with filling, you can use ready-made purchased minced meat, but it would be better to cook it yourself. Wash the chicken fillet portions well, remove the middle bone and dry. Peel and rinse onions and garlic.

  2. We pass the chicken fillets through a meat grinder and add onions and garlic. Add salt, spices and egg (optional). Mix everything thoroughly.
  3. We prepare the filling, cut the cheese into sticks of about 1*1 cm, the same sticks and even a little more butter. We take greens to taste, it can be parsley, dill, cilantro, basil, finely chop. Cut the pickled mushrooms in half or into quarters.

  4. Before you start making zrazy, prepare the breading, a plate with a beaten egg and a plate with breadcrumbs in advance. If the crackers are not salted, they need to be salted, but lightly.   • 1 kg minced meat (chicken, turkey, pork, beef)
  • 6 boiled chicken eggs
  • 2 large onions
  • Salt pepper
  • Rusks for rolling

Fry the onion until golden brown. Onions fried in butter are much tastier. To prevent the butter from burning, add a little olive or vegetable oil to it.

Finely chop the boiled eggs and mix with onions. Salt and pepper. The filling is ready. I don’t add salt to the filling; I like its slightly sweet taste in the zrazy.

Wet your hands with cold water and form the minced meat into a flat cake. Place the filling in the middle (put more or less of it - decide according to your taste).

  • Onions - 2 pcs.
  • Mushrooms - approximately 200 g
  • Eggs - 4 pcs.
  • Cream - 3 -5 tbsp.
  • Vegetable oil - for frying
  • Salt - approximately 2/3 tsp.
  • Spices (mixture of peppers, turmeric, coriander) - to taste

Ingredients for the sauce:

  • Water – 600 ml
  • Sour cream – 200 ml
  • Soy sauce - 1 tbsp. l.
  • Salt and spices - to taste

Pass the chicken breast through a meat grinder.

Add one onion to the minced chicken.

For juiciness, add cream to the minced meat.

  • 500 g minced chicken
  • 80 g white stale bread without crust
  • 1 onion
  • 2 cloves garlic
  • 50 ml vegetable oil
  • 1 tbsp. homemade mayonnaise
  • salt and pepper to taste

For the zrazy filling:

  • 1 large onion
  • 1 carrot
  • 1 boiled egg
  • small bunch of greenery
  • 1 tbsp. vegetable oil
  • salt, pepper to taste

For the sauce:

  • 400-500 ml milk
  • 1 tbsp. flour
  • 1 butter (or vegetable oil)
  • salt, pepper to taste

Combine the minced meat with soaked white bread, very finely chopped or grated onion, crushed garlic, add 1 tablespoon of vegetable oil, salt and pepper to taste, mix well, beat and put in the refrigerator for the time it takes to prepare the filling and sauce.

Sauté finely chopped onion and grated carrots in vegetable oil until golden brown. Cool slightly, add chopped egg and herbs, add a little salt and pepper (optional) and mix thoroughly.

Dissolve butter or vegetable oil in a frying pan, add flour and fry it until light beige, then pour in milk and, stirring with a whisk, boil the sauce to the desired thickness. Add salt and pepper to taste at the end of cooking.

Preheat the oven to 180 degrees. Cut the peeled onion into rings or half rings of small width. Champignons absorb water too quickly, so we wash them under running water, dry them with a paper towel and cut them into neat plates, then cut the plates in half. Heat a frying pan with a small amount of sunflower oil and fry the onion in it for 4 minutes over high heat. Add chopped mushrooms to the pan, mix the ingredients and continue cooking for another 8 minutes, add salt and spices to taste.

We pass the chicken fillet through a meat grinder if you did not purchase ready-made minced meat. Mix the chopped meat, ground black pepper and a little salt in a bowl.

Lightly wet your hands in cold water (this will prevent the minced meat from sticking to your fingers ) and form all the meat into 4 identical cakes. The diameter of each cake should not exceed 8 centimeters.

Transfer the onions and mushrooms from the frying pan to a plate lined with a paper towel, allow time to cool and drain off excess oil. On the previously prepared flatbreads, place a teaspoon of the prepared mushroom filling in the center, bring the edges of the meat flatbread to the center and carefully glue the edges of the cutlet together. Line a baking pan with parchment paper, lightly grease it with vegetable oil and place the formed zrazy on it. Place the pan in the oven and bake the cutlets for 10 minutes until the meat is cooked.

To prepare the side dish, we need to wash a piece of pumpkin and cut it into thin but wide layers as shown in the photo. Then you need to heat a frying pan with a couple of tablespoons of vegetable oil and fry the chopped pumpkin in it for 6 minutes over high heat.

Peanuts wrapped in cling film must be crushed with a kitchen hammer into not too small pieces.

We tear the cauliflower into inflorescences and add them to the frying pan with the pumpkin, and add crushed peanuts there too.

Stir and fry the ingredients for another 5 minutes.

Place the slices of white bread in a deep bowl and fill with milk at room temperature. Let the bread sit for 5 minutes until it soaks and becomes soft.

Wash the chicken fillet thoroughly, dry it and remove any films. Cut the meat into medium-sized pieces to make it easier to grind into minced meat. Place the chicken pieces into a blender bowl. Add to the meat a peeled onion, cut into 4 parts.

Squeeze the bread slices from the milk and add them to the blender bowl with the rest of the ingredients. Add salt and spices to taste.

Grind the ingredients to a homogeneous consistency. Transfer the prepared minced chicken into a deep bowl. If you don't have a blender, use a meat grinder with a fine grid to prepare the minced meat.

Wash the eggs, add cold water and boil for 10 minutes after boiling until the yolk inside becomes hard. Peel the hard-boiled eggs and cut them into small cubes. Transfer the crushed ingredients into a deep bowl.

Wash the green onion feathers, dry them and cut them into thin rings. Fry the green onions in a small amount of sunflower oil to remove excess bitterness from them.

Add fried green onions to a bowl with chopped boiled eggs. For flavor, add finely chopped dill to the filling.

Mix the filling until it becomes homogeneous.

How to cook zrazy from chicken fillet with mushrooms in a frying pan

First you need to prepare the minced meat for zraz. Wash the chicken fillet, I took the breast. Peel and wash one onion. Pass the chicken fillet and onion through a meat grinder.


Soak the white loaf in cold boiled water; after 7-10 minutes, squeeze it out. And also pass through a meat grinder, add to the minced meat.


Salt and pepper to taste. You can add any dry seasonings such as oregano, basil, a mixture of French or Italian herbs.


Mix the minced meat thoroughly. If it makes sense, beat the minced meat on the table or beat it with a blender for greater viscosity and uniformity.


Peel, wash and finely chop one onion. Place in the pan.

Wash the oyster mushrooms and chop finely. Add to the pan with the chopped onion.

Instead of oyster mushrooms, you can use champignons, as well as wild mushrooms.


Pour in sunflower oil and simmer the mushrooms and onions for 8-10 minutes over medium heat, stirring occasionally. The filling is ready now.

If desired, you can add grated hard cheese to the filling; the zraz filling will then flow out when cutting the finished hot zraz.


Take a portion of minced meat. You need to make a cake out of it. Place a tablespoon of mushrooms and onions in the middle of the flatbread. It is up to you to decide what size to make the zrazy. I like them quite large.


Form the minced meat into an oblong meat pie. These are the zrazy. Break the egg into a deep bowl or plate, beat it a little, as if you were making an omelette. Dip the zrazy into the egg.


Roll in breadcrumbs. It is better to use homemade crackers.


Place the zrazy in a frying pan with hot refined sunflower oil.


Fry the zrazy on all sides until golden brown.


Chicken zrazy with mushrooms is ready. Serve them with any side dish, vegetables and pickles.

If you want to make zrazy more dietary, then cook it in the oven. Baked zrazy is delicious served with milk or any other sauce.
