Pancakes with kefir dough - a simple recipe

Tender pancakes are a fabulously tasty dish that goes equally interesting with both savory sauce and sweet jam. Preparing such pancakes is a very simple process that will allow you to “refresh” your daily menu and surprise your guests. But what is needed to make tender pancakes, what products and what cooking method? See the answers to these questions below.

To prepare these pancakes you will need the following set of products:

  • sour milk or kefir – 0.5 l;
  • egg – 2 pcs.;
  • refined flour – 250 gr.;
  • white sugar – 4 teaspoons;
  • baking powder (you can use ordinary soda) – 0.5 teaspoon;
  • salt (to your own taste);
  • vegetable oil.

The technology for preparing the simplest kefir pancakes is as follows:

In a deep container you need to mix the sugar and eggs, add some salt. Pour half of the prepared sour milk into the resulting mixture. In the absence of sour milk, you can use fresh milk or kefir.

But know that such pancakes with the addition of sour milk will come out more fluffy and tender, and this will only justify their name.

The next step is to add flour, add the remaining amount of milk and mix thoroughly. It is better to mix the ingredients with a whisk to avoid the formation of clots.

And yet, it’s important! The dough should have a creamy consistency. If the fat content of the milk is not high, then it is worth adding some more flour.

And lastly, you need to add soda or baking powder to the resulting dough. The finished dough should be left for a few minutes. When air bubbles appear on the surface, you can start cooking.

The frying process is similar to preparing classic pancakes - with a large spoon dipped in water, place a portion of dough into a frying pan heated with oil and wait for the “appetizing color” on each side of the pancake, remove the finished pancakes from the pan onto a paper towel to remove unnecessary fat from them.

As noted above, these pancakes are good both with sweet jam and with some unusual, spicy sauce.

Video recipe: Quick kefir pancakes in 5 minutes

Natalya Ignatova especially for the site “Useful Tips”.!

I woke up one Saturday morning and thought that I really wanted something delicious!!! And then I remembered how my mother spoiled us with pancakes when we were children. It’s so delightful to wake up to the tantalizing aroma of fresh baked goods, run to the kitchen... And there a mug of tea and hot, tender pancakes are already waiting for you!!! Mmmmmm.. So, spurred on by these memories, I decided to fry pancakes. And since, while taking out all the ingredients from the cupboard, I noticed rye flour, I thought: “What if...?” Result: rye pancakes with kefir))).
I did everything “by eye”, so if there is anything, correct it as you wish))).

The composition of rye pancakes with kefir includes:

  • 0.5 l kefir;
  • 0.25 tsp. soda;
  • 1 egg;
  • Sugar, salt - to taste (I put 2 teaspoons of sugar and a pinch of salt);
  • 1-1.5 tbsp. rye flour;
  • 0.5 tbsp. wheat flour;
  • Vegetable oil or fat for frying.

Method for preparing rye pancakes with kefir:

Break the egg into a bowl, beat it with sugar and salt.

We extinguish the soda in kefir - if it is old. If not, then quench it with citric acid. Add kefir to the egg and beat well.

Sift the flour into a bowl using a small strainer and whisk again.

Heat fat or vegetable oil in a frying pan, spoon out pancakes and fry on both sides.

If you haven’t skimped on the fat, then put the finished pancakes on a napkin so that the excess fat flows around, and only then transfer it to a plate and put it on the table.
Serve the pancakes with sour cream or jam - whichever you prefer. And definitely hot tea!!!)))

    A little about rye flour

    It is unlikely that our ancestors loved rye flour so much because of its benefits. Most likely they didn’t even know about it and had never heard of it. It’s just that rye flour was much cheaper than wheat flour - that’s the whole secret. But people began to think about the usefulness of this product only in the 20th century. And they found out that rye flour perfectly cleanses the body, removing waste and toxins from it. And it contains a considerable amount of minerals. But there are few calories in rye products, which is also not so bad.

    In general, there are three varieties of rye flour: seeded, peeled and wallpaper. It is recognized that peeled flour is the most beneficial for our body. So when purchasing this product, it makes sense to choose it. Well, now it's time to get back to the pancakes.

    Rye flour pancakes, recipe with yeast

    If you have the time and desire to tinker a little, then it is best to use a recipe for making rye pancakes with yeast. The finished flatbreads turn out fluffy and appetizing. To prepare them you need to have on hand:

    • rye flour – 400-450 g;
    • eggs – 2 pcs.;
    • sugar – 3 tablespoons;
    • milk – 200 ml;
    • yeast - 1 sachet of dry product;
    • water – 200 ml;
    • salt - to taste;

    You should start baking pancakes from rye flour by preparing the dough. To do this, pour yeast into slightly warmed water, add a tablespoon of sugar and mix everything thoroughly. When the sugar has dissolved, add 50 g of flour (about 2 tablespoons) to the mixture, mix again and leave in a warm place for 20-30 minutes.

    Beat the eggs with the remaining sugar and add to the prepared dough, pour in the milk heated a little on the stove and mix everything again. Add flour to the resulting mixture and knead the dough. The resulting product should be quite thick, but at the same time slide off the spoon, like good thick sour cream. Cover the bowl with the dough with a lid and leave to rise in a warm place for about an hour and a half.

    Pour quite a lot of oil into the frying pan and place on high heat. When the oil is hot, turn the heat down to medium and you can start frying the pancakes. To do this, scoop the dough with a spoon and place it in the oil. You should not place the pancakes too close to each other, as they will rise during heat treatment.

    You need to fry these pancakes for 3-5 minutes on each side under a closed lid. Place the finished pancakes on a cutting board lined with paper napkins to absorb excess fat. Well, then they can be transferred to a plate and served with sour cream, honey or jam.

    Low calorie pancakes without eggs

    In previous recipes, pancakes were fried in a large amount of oil, which certainly makes the resulting dish quite high in calories. However, this is not a dogma. The number of kilocalories can be significantly reduced if you prepare the pancakes a little differently. To do this you will need:

    • rye flour – 250-300 g;
    • natural yogurt – 400-450 g;
    • milk – 100 ml;
    • soda – 1/2 teaspoon;
    • vegetable oil – 2 tablespoons;
    • vinegar - to extinguish soda;
    • sugar - to taste.

    Quench the soda with vinegar and mix in a deep bowl with all the other ingredients except flour and butter. Then add flour to the resulting mixture and stir until smooth. Pour vegetable oil into the finished dough and mix everything again.

    The dough is laid out in portions on a dry, heated frying pan. Pancakes are fried over medium heat for 3-4 minutes on each side until a pleasant golden brown hue is obtained.

    Well, you can serve this breakfast with anything. The main thing is that the owner and her family members like it. As for drinks, pancakes go best with well-brewed tea.

You can fry the pancakes in vegetable or melted butter. Sunflower, olive, corn and other oils are also suitable. Experimenting with different types of flour is also encouraged.
